I've recently stumbled upon an easy way to get Apple II emulation on an iPhone without any need for jailbreaking or using an internet browser based emulator.

1. Head to the AppStore and download PPSSPP (The PlayStation Portable Emulator) 
2. Download PYAE.zip - I found it here - https://drive.google.com/file/d/1SrdP8Y6FBFDFNrRgK9ZC_BOmzd1_83A9/view
3. Using the files app, extract PYAE.zip in the PPSSPP folder under PSP -> GAME
4. Launch PPSSPP and launch pyae 
5. Enjoy Apple II on iOS :-) 
   
   

This emulator is quite basic.  It only supports .dsk files, no harddrive, or much else.  Sound and Video works great.  There is a soft keyboard that works fine as well.  Perfect for quick offline gaming! 

If you want something more full featured and you have available internet you can also use https://apple2ts.com/ right from the browser.
